2025/01/15 Roasting radicchio: Preheat oven to 425 degrees F. Wash, core, and cut radicchio into six wedges lengthwise. Work olive oil into the outer leaves, sprinkle with salt, and place in a casserole dish cut side down. Roast until outer leaves crisp, at least 8 minutes. Serve with stewed beans.
