  • Use agar powder (not flakes); measure the agar by weight; read the directions for your brand of agar; properly prepared agar sets MUCH more quickly than gelatin; add acidic ingredients after boiling the agar;
  • Steep the spices separately from the gentle 90-second boiling of the pistachio milk and agar
  • Use allulose for the sweetener
  • Stir in the vanilla and zest after stirring in the steeped mixture (unless steeping with vanilla bean instead of extract)
  • For less coconut flavor, instead of coconut milk and cream, use refined coconut oil mixed with pistachio milk to reach a 8 to 12% fat content
